HELLO, you PERFECT lil’ FLAVOR-Packed Veggie with ranch on the side for an extra little something!

We start with our beautiful florets and toss them in our quick homemade ranch – giving them time to bathe in the ranch (the more time the better – they like taking their time) then its into a hot oven or air fryer. The cauliflower florets become perfectly roasted all while soaking up the ranch flavor. It’s simple, but a classic winning flavor combination.

You may already have many of these ingredients at home, so check your spice cabinet & fridge really quick, then make yourself an incredible treat using one of MY favorite veggies – the amazing (chameleon of vegetables) CAULIFLOWER!

I ABSOLUTELY adore and CRAVE roasted cauliflower! This roasted ranch-coated cauliflower is an elevated version that will delight ranch lovers! It’s crispy on the outside, seasoned to perfection, and surprisingly hearty!

The ranch sauce is a very welcome addition and turns these roasted cauliflower florets into a CRAVEWORTHY snack food while being covert healthy!

Roasted Ranch Cauliflower is an excellent side dish or appetizer/party snack. Consider doubling the recipe (use two separate sheet pans so they still crisp up), there never seems to be enough of these delicious small bites.

For Meal Prep:

Place your leftovers into glass food prep containers in the fridge to reheat for future meals throughout the week. Cauliflower reheats very well in an air fryer.

Store sauce separately. I recommend storing this dish in the fridge for 2-3 days max.

Because of its mild taste, it can be added to a number of recipes to replace less nutrient-dense, higher-carb ingredients.

It can be used a ton of different ways in your meals – steamed or roasted, turned into “rice,” mashed like potato, or even shredded and used in bread and pizza crust!

Ingredients:

1 large head cauliflower, cut into medium sized florets
1/2 cup plain Greek yogurt
1/2 cup homemade mayonnaise (recipe above can you also link itemized it here?)
1 tsp garlic powder
1 tsp onion powder
1 tsp dried chives
1 tsp dried dill
1 tsp dried parsley
sea salt and ground pepper, to taste, about 1/2 teaspoon each

Instructions:

Preheat your oven to 400 degrees f. and line a large sheet pan with parchment paper.

Place your cauliflower florets into a large bowl.

In a separate small bowl, whisk together all the remaining ingredients to create your ranch sauce.

Drizzle 2/3 of this ranch sauce over the cauliflower. Reserve 1/3 to use as a dipping sauce.

Thoroughly toss and stir to combine the cauliflower and coat it really well with the ranch sauce.

Allow the cauliflower to sit/marinate for 30 min or refrigerate (covered) overnight if possible for the best flavor.

Transfer your coated cauliflower to your prepared sheet pan and arrange it in a single layer without
overlapping.

Roast for 35-40 minutes, flipping halfway, until browned on the edges.

Serve with the remaining ranch dip.

Air Fryer instructions:

Preheat your air fryer to 380 degrees f.

Add cauliflower to your air fryer basket in a single layer (cook in batches if needed – don’t crowd the basket). Cook cauliflower in the air fryer for 7-10 minutes (depending on the size of your florets), shaking the basket halfway through until browned on the edges.

Serve with the remaining ranch dip.
